Create your Salads in a jar for an easy grab lunch that'll stay fresh for days

We've all been taking about taking health issues seriously. Your doctor probably has also told you to eat salad everyday. But for one reason or another you don't because, a) it takes time to make, b) It doesn't stay too fresh till lunchtime for you to have it c)It's hard to bring over to office for lunch. We don't know about the other obvious excuses you have, but if these are your problems for getting that healthy dose of salad then  our recommendation is that you start preparing your salads in a jar.

Author of Food blog "Fat girl trapped in skinny body", Julia Costa Mesa recommends that you take your Sunday and prepare a few jars of salad on that particular day. She also shared her secret of how they stayed fresh. This includes a particular method of layering your vegetables, blending the dressing so that the oil doesn't separate and adding water to retain freshness. Here's what she wrote:

"The most important part of the layering is making sure the dressing and the spinach (or whatever 'leaf' you choose) don't touch. As long as they stay separate, these salads can be made up to 4 days in advance and will stay fresh in the fridge with a lid on. This is one of my tricks to eating salad everyday for lunch at work. I make a few jars on Sunday night and just grab one to bring to work everyday. When you're ready to eat, just shake it up."
